A new Italian sandwich shop on Chapel Street serving fresh focaccia and authentic “top quality ingredients” has opened its doors.
The new shop La Fugassa opened with a ‘soft launch’ on Sunday 27 April, and has since impressed Salford residents with their fresh and authentic meals.
And with the focus on authentic and high quality Italian meat and sourdough focaccia they are hoping to make meals “that people will never forget.”
Launching on Sunday 27 April, o-owner Luca De Falco spoke about the importance of the high quality products, he said: “We want to make everything fresh everyday. We want the simple things to be excellent.
He continued to joke: “But there is a reason why the kitchen is bigger than the seating area – as we have to have the room to make these meals.”
“But we are also experimenting with loads of specials like Wagyu and Octopus focaccia.
“So we are focusing on the focaccia, and allow people to get used to this type of cuisine.”
And with the shop offering a wide range of meats, they also put an importance on making everything fresh in house.
Luca continued: “It is Italian focaccia, but it is made with sourdough. The sourdough takes 24 hours to make, then we mix it with our focaccia dough and then we have to wait another 24 hours.
“The 48 hour process is important to our product because we want to ensure that it is soft in the centre and crunchy on the outside.
“And then we get to fill it fantastic Italian high-quality ingredients – we hope that the food will speak for us.”
Luca added: “But in the preparations for this menu, we ate a lot so we can make the perfect matches.”
And as well as the choice of ingredients, and the response to opening he said: “We opened and the response has been very good as people are seeing we are putting detail into the quality of the product.
“And when people see it and taste it, they can tell the difference straightaway. It has been positive.
He continued: “This is also helped with the location, it is a growing area, a busy street and I love the fact we have big windows in our shop with the view of the Cathedral across the road.
And as Luca pointed out that the staff are from across Italy, bringing a direct influence and authentic feeling to the restaurant.
The shop opened on Sunday, but has since seen great success early on, with Luca detailing that a lot of customers have left happy with the service.
But there also seem to be a look to the future of the restaurant, as they await the approval of their alcohol license.
Luca added: “We are excited to start doing wine tasting from all over the Mediterranean, and offering selections from Italy, France, Spanish, and Greek.
“We will also be hoping to serve these with cured meats and a variety of flavours.
“But we will also be extending our hours to 9:30, allowing people to try a selection of boards and cocktails – but we can’t wait.”
And with beginning going well Luca insisted that he had almost no expectations to begin with, he said: “I started this with no expectations, because in life there are always highs and lows so I told myself not to expect anything and lets see.”
But with a great start, and even brighter future it seems that this Italian restaurant will be a welcomed feature to Chapel Street. More information about the shop can be found here.
