Salford’s new Greek Coffee shop, Coffee Rules, is a delightful new coffee shop serving a wide range of interesting snacks and delicious drinks from baklava and kataifi to Freddo Espressos and Frappes.
Nestled in Salford, the Fredrick Road cafe is a true hidden gem.
With its opening nine months ago, the Salford store is the second shop in the brand, with the first coming on Wilmslow Road which opened in 2019.
I sat down with Thomas Kasaras, son of the owner of the franchise and spoke to him about the family ran business, the cost of running a business and any plans to expand the franchise nationally and internationally.
Kasaras admitted: “We get a lot of students… We’ve got the free parking here which really helps the customers.
“It’s a bit stressful obviously, but overall? It’s a good experience.
“From April the minimum wage requirements is going to get higher, it doesn’t affect the big businesses, it affects us.
“It affects the people as well, when I have to raise my prices as a result customers aren’t going to like that.
“You have to find a balance for it.
“Realistically we want to expand in the UK, we’re looking at London, Liverpool. We’re trying to make it a franchise.”

The menu includes a number of Greek specialities. From traditional baklava to koulouri.
The price may seem on the expensive side, however for the quality of food and the amount you get it’s better than going to a chain coffee shop and spending a similar amount on something with infinitely less charm.
The chocolate cake was amazing. A simple but well executed dish that wasn’t served in a poultry portion and didn’t leave anything to be desired.
The caramel latte was perfect, sweet, and caffeinated as all coffee should be. As I write this now it’s kept me warm while the rain comes down outside
The Freddo Espresso, a refreshing iced coffee with a bold espresso kick, provides the perfect balance to the rich and savoury flavours of the dishes. Never having had a Freddo Espresso before as an uncultured Englishman I was half expecting it to just be an espresso… with a Freddo.
In reality, it is made by blending espresso with ice, often shaken to get that frothy texture, with the word Freddo meaning ‘cold’ in Italian.
I even heard that they’ll be expecting to open a new shop in Greece! I wonder if they’ll bring a bit of Salford with them.
